Jamaican food has a way of announcing itself before it reaches the table. The aroma rises first, warm, sharp, earthy, sometimes sweet, Jamaican jerk chicken sometimes almost smoky. A pot of curry goat can fill a house with turmeric, coriander, and garlic long before the meat softens.
