The first time I Santorini boat tour landed on Santorini by way of helicopter, we skimmed the caldera rim just as a catamaran unfurled its sail under us. The pilot banked somewhat, the whitewashed villages tilted into view, and the volcano’s black rocks minimize a crescent through the Aegean.
